Vegetarian food is not popular in Cuba. Very few restaurants have vegetarian food. Fat (usually pork fat) is an important flavoring in Cuban food, and they often cook vegetables in pork fat.
You can find simple salads in nicer restaurants, which are usually served with vinaigrette. Sweet potatoes, yucca, and rice and beans are the best options for filling vegetarian fare in Cuba. Try stocking up on fresh fruit and a few vegetables when you come across privately owned produce stands.
